Achari Chicken Karahi
This desi chicken karahi has bold pickle-style flavours using homemade achari masala, yogurt, tomatoes, and stuffed green chillies.

Grind all ingredients into a fine powder.

Achari Yogurt Mix.

1 cup yogurt.

3 tbsp prepared achari masala.

Mix well and set aside.

Stuffed Green Chillies.

Remaining achari masala.

Juice of 1 lemon.

Green chillies (slit)

Mix leftover masala with lemon juice, stuff into green chillies, and set aside.

Heat ½ cup oil in a pan or karahi.

Add 1 tbsp ginger garlic paste and sauté lightly.

Add: 1 tsp mustard seeds, 1 tsp nigella seeds, 1 tsp cumin seeds, whole dried red chillies and 1 tsp fenugreek seeds.

Add 1 kg chicken and cook on medium flame for 5 minutes.

Add 4 blended tomatoes, cover, and cook for 5 minutes.

Add yogurt + achari masala mixture.

Cook on high flame for 3 minutes, then cover and cook until oil separates and water dries.

Garnish with stuffed green chillies.

Julienned ginger.

Lemon slices.
