Mutton karahi the straightforward way: pressure-cook the meat until tender first, then finish it in the karahi with tomatoes, black pepper and plenty of green chillies.

In a pressure cooker, add ½ cup oil, 1 kg mutton, salt, garlic paste, and 3 cups of water.

Mix well, close the pressure cooker, and cook for 20 minutes or until the mutton becomes tender.

Once the mutton is cooked, transfer it to a karahi.

Add chopped tomatoes and green chillies.

Add black pepper and mix everything well.

Cover and cook on medium flame until the tomatoes become soft and tender.

Once the oil separates and the karahi is nicely cooked, garnish with green chillies and lemon slices.

Serve hot with naan, roti, or chapati.
