Mutanjan is the coloured sweet rice that appears on every Eid table: sella rice with ghee, dry fruits, khoya and cham cham piled on top.

Soak 1 kg sella rice for 6 hours for best results.

Boil the rice until 90% cooked, then drain in a strainer and rinse lightly with cold water. Set aside.

Take 3 tbsp of boiled rice, divide into three portions, and color them red, yellow, and green.

In a pan, heat 1 cup ghee. Add green cardamoms and cloves.

Make the first layer with boiled rice, then add 1 cup sugar.

Fry the dry fruits for 2 minutes and add half of them over the rice.

Repeat the layers: rice → 1 cup sugar → 1 cup fresh cream.

Cook on high flame until the sugar melts and moisture reduces.

Add the remaining dry fruits, then sprinkle the colored rice on top.

Garnish with tutti frutti, fresh khoya, and colorful cham cham.

Cover and cook on dum (steam) for 15 minutes, 3 minutes on high flame, then low flame for the remaining time.
