Shinwari Dum Qeema

Ingredients

  • 1¾ cup oil
  • 1¾ tsp salt
  • 1¾ kg beef mince
  • 3½ tbsp ginger garlic paste
  • 14 tomatoes · with green chilies
  • 3½ tsp black pepper
  • 3½ tsp crushed red chilies
  • 1¾ tsp salt · extra, adjust to taste
  • 3½ cup yogurt
  • Coal · for smoke

Garnish

  • Green chilies · lemon slices, and julienned ginger

Instructions

  1. Heat oil in a pot, add ½ tsp salt and minced beef. Fry for 2 minutes.
  2. Add ginger garlic paste and mix well.
  3. Add tomatoes with green chilies, cover, and cook for 5 minutes until tomatoes are tender. Remove tomato skins.
  4. Add spices: black pepper, crushed red chilies, and extra salt. Mix well.
  5. Add yogurt, cover with lid, and cook on dum (low flame) for 10 minutes.
  6. Give coal smoke (dhuwan) for a smoky Shinwari flavor.
  7. Garnish with green chilies, lemon slices, and ginger. Serve hot.
