Mixed Vegetables

This mixed vegetable curry is made using seasonal vegetables and cooked in a pressure cooker without water, making it a perfect healthy desi food option for everyday meals.

Ingredients

  • ⅛ cup oil
  • ½ sliced onions
  • 4-5 garlic cloves · crushed
  • ¼ tsp cumin seeds
  • ¼ tsp nigella seeds · kalonji
  • ½ chopped tomatoes
  • ½ lemons

Vegetables

  • Potatoes
  • Peas
  • Cauliflower
  • Spinach
  • Fenugreek leaves · methi
  • Carrots

Spices

  • ¼ tsp red chilli powder
  • ⅛ tsp turmeric powder
  • ⅛ tbsp coriander powder
  • Salt to taste

Instructions

  1. Heat ½ cup oil in a pressure cooker. Add 2 sliced onions and fry until golden brown.
  2. Add 4-5 garlic cloves (crushed).
  3. Add 1 tsp cumin seeds and 1 tsp nigella seeds (kalonji).
  4. Add 2 chopped tomatoes and cook until soft.
  5. Add all the vegetables: potatoes, peas, cauliflower, spinach, fenugreek leaves (methi) and carrots.
  6. Add spices: 1 tsp red chilli powder, 1 tsp crushed red chillies, ½ tsp turmeric powder, ½ tbsp coriander powder and salt to taste.
  7. Mix well and pressure cook for 5 minutes without adding water.
  8. After cooking, add juice of 2 lemons and mix gently.
  9. Garnish: fresh coriander leaves, green chillies, and julienne-cut ginger; serve hot with roti or rice.
