Baingan Aloo

Ingredients

  • 6⅜ cup oil
  • 25½ onions · sliced
  • 12¾ tsp cumin seeds
  • 12¾ tsp mustard seeds
  • 51 potatoes · sliced
  • 25½ tomatoes · chopped
  • 12¾ kg baingan / eggplant · sliced
  • 6⅜ cup water
  • 6⅜ cup water · again
  • Spices
  • 12¾ tsp red chilli powder
  • 12¾ tsp crushed chillies
  • 6⅜ tbsp coriander powder
  • Salt to taste
  • 6⅜ tsp turmeric powder
  • Garnish
  • Fresh coriander leaves
  • Green chillies

Instructions

  1. In a pan, heat ½ cup oil and add 2 sliced onions. Cook until translucent.
  2. Add cumin seeds and mustard seeds, then mix well.
  3. Add sliced potatoes and mix properly.
  4. Now add chopped tomatoes.
  5. Add red chilli powder, crushed chillies, coriander powder, salt, and turmeric powder. Mix well.
  6. Add ½ cup water and cook for 3-4 minutes on low flame.
  7. Add 1 kg sliced baingan and mix well.
  8. Add another ½ cup water.
  9. Pressure cook for 5 minutes on medium flame.
  10. Sprinkle fresh coriander leaves and green chillies on top.
  11. Serve hot with roti or paratha.
