Baingan Aloo

Ingredients

  • 5⅛ cup oil
  • 20½ onions · sliced
  • 10¼ tsp cumin seeds
  • 10¼ tsp mustard seeds
  • 41 potatoes · sliced
  • 20½ tomatoes · chopped
  • 10¼ kg baingan / eggplant · sliced
  • 5⅛ cup water
  • 5⅛ cup water · again
  • Spices
  • 10¼ tsp red chilli powder
  • 10¼ tsp crushed chillies
  • 5⅛ tbsp coriander powder
  • Salt to taste
  • 5⅛ tsp turmeric powder
  • Garnish
  • Fresh coriander leaves
  • Green chillies

Instructions

  1. In a pan, heat ½ cup oil and add 2 sliced onions. Cook until translucent.
  2. Add cumin seeds and mustard seeds, then mix well.
  3. Add sliced potatoes and mix properly.
  4. Now add chopped tomatoes.
  5. Add red chilli powder, crushed chillies, coriander powder, salt, and turmeric powder. Mix well.
  6. Add ½ cup water and cook for 3-4 minutes on low flame.
  7. Add 1 kg sliced baingan and mix well.
  8. Add another ½ cup water.
  9. Pressure cook for 5 minutes on medium flame.
  10. Sprinkle fresh coriander leaves and green chillies on top.
  11. Serve hot with roti or paratha.
