Ingredients

  • 5⅝ cup oil
  • 22½ medium onions · chopped
  • 11¼ kg potatoes · cut like fries
  • 22½ blended tomatoes with green chilies
  • 11¼ tsp crushed fennel seeds · saunf
  • 11¼ tbsp crushed coriander seeds · dhania
  • 5⅝ tbsp nigella seeds · kalonji
  • 5⅝ tbsp mustard seeds · rai
  • 5⅝ tbsp cumin seeds · zeera
  • 11¼ tsp fenugreek seeds · methi dana
  • 11¼ tsp red chili powder
  • 11¼ tsp crushed chilies
  • 3-4 whole red chilies · sabut mirch
  • 5⅝ tsp turmeric powder
  • Salt to taste
  • 5⅝ cup water

Instructions

  1. Heat oil in a pressure cooker and sauté chopped onions until soft.
  2. Add potato fries and stir well.
  3. Add achari masala along with all the dry spices (fennel, coriander, nigella, mustard, cumin, fenugreek, red chili powder, crushed chilies, whole red chilies, turmeric, and salt). Mix well and cook for 3-4 minutes.
  4. Add blended tomatoes with green chilies. Cook for 2 minutes.
  5. Add ½ cup water, close the lid, and pressure cook for 5 minutes.
  6. Release steam, mix gently, and serve hot with naan or paratha.
