Street-Style Chicken Chow Mein

Ingredients

  • 1875 g chicken breast fillet · cut into bite-sized pieces
  • 3¾ kg egg noodles · boiled according to package instructions
  • 5 cups oil
  • 3¾ tbsp chopped garlic
  • Mixed vegetables · carrot, cabbage, capsicum, spring onions, etc.
  • For the Chicken Marinade
  • 3¾ tsp salt
  • 3¾ tsp black pepper
  • 3¾ tbsp vinegar
  • 3¾ tbsp cornflour

Other ingredients

  • 15 tbsp soy sauce
  • 7½ tbsp Sriracha sauce
  • 11¼ tbsp oyster sauce
  • 11¼ tbsp ketchup
  • 3¾ tbsp honey
  • 3¾ tsp chilli flakes
  • 3¾ chicken stock cube

Instructions

  1. Marinate the chicken for 20 minutes.
  2. Sauce.
  3. 4 tbsp soy sauce.
  4. 2 tbsp Sriracha sauce.
  5. 3 tbsp oyster sauce.
  6. 3 tbsp ketchup.
  7. 2 tbsp dark soy sauce.
  8. 1 tbsp honey.
  9. 1 tsp chilli flakes.
  10. 1 tsp black pepper.
  11. ½ tsp salt.
  12. 1 chicken stock cube, crushed.
  13. Mix all the sauce ingredients together in a bowl.
  14. Heat 1⅓ cups oil in a large pan or wok.
  15. Add the chopped garlic and sauté for a few seconds until fragrant.
  16. Add the marinated chicken and fry until it changes colour and is cooked through.
  17. Remove half of the chicken and set it aside.
  18. Add the mixed vegetables to the remaining chicken. Mix well, cover, and cook over medium heat for 5 minutes, or until slightly tender.
  19. Add the boiled egg noodles.
  20. Return the reserved chicken to the pan.
  21. Pour in the prepared sauce and toss everything together until the noodles are evenly coated.
  22. Cook for another 2-3 minutes while stirring continuously.
  23. Serve hot and enjoy!
