Ingredients

  • 1⅛ cup oil
  • 4½ sliced onions
  • 1⅛ tsp nigella seeds · kalonji
  • 1⅛ tsp mustard seeds · rai
  • 2¼ tsp cumin seeds · zeera
  • Green & red chillies
  • 4½ blended tomatoes
  • 2¼ tsp red chilli powder
  • 2¼ tsp crushed chillies
  • Salt to taste
  • 1⅛ tsp coriander powder
  • 1⅛ tsp turmeric powder
  • 2¼ medium cauliflower (gobi) · cut into florets
  • 2-3 potatoes · diced
  • 1⅛ cup water
  • Lemon · ginger, green chillies, coriander leaves & garam masala for garnish

Instructions

  1. Heat ½ cup oil in a pot and fry 2 sliced onions until golden brown.
  2. Add nigella seeds, mustard seeds, cumin seeds, along with green and red chillies.
  3. Add 2 blended tomatoes and cook for 1 minute.
  4. Add spices: red chilli powder, crushed chillies, salt, coriander powder, turmeric powder.
  5. Cook for 2 minutes until oil separates.
  6. Add cauliflower (gobi) and potatoes (aloo). Mix well.
  7. Pour ½ cup water, cover, and cook on high flame for 3-4 minutes in pressure cooker.
  8. Garnish with lemon juice, julienned ginger, fresh green chillies, coriander leaves, and a pinch of garam masala.
  9. Serve hot with roti, paratha or naan.
